Homemade Rice Krispies Treats

 

Below you will find a recipe for easy homemade marshmallows and then steps to prepare krispies treats.

The brands of items I used are as follows (click the link to view picture on Amazon):

Gelatin – Great Lakes non-Hydrolyzed Gelatin (red bottle)

Rice cereal – Erowhen Brown Rice Cereal

Butter – KerryGold Irish Butter

I suggest you begin making the marshmallows first and then brown the krispies. Enjoy!

Homemade Marshmallows

Ingredients:

  • 1 cup water (split in 2 ½ cups)
  • 3 Tbsp. non-hydrolyzed gelatin
  • 1 ½ cups sugar
  • 1 tsp. vanilla extract
  • ½ tsp. tapioca starch (optional)

Steps to crEATe:

1.)    Mix ½ cup water and gelatin in large mixing bowl. Let sit for 5 minutes allowing to bloom. If you have tapioca starch add it here for texture and whitening of marshmallows

2.)    In medium sauce pan on medium-high heat add ½ cup water and sugar. Bring to a boil, let boil for 3 minutes. Turn off heat.

3.)    After 5 minutes add vanilla extract to gelatin/water mixture. With hand mixer, begin mixing as you pour the sugar/water mixture over the gelatin/water mixture.

4.)    Mix on low for 2 minutes after all water is poured in mixing bowl. Mix on HIGH for 5-8 minutes until the liquid turns to marshmallows. (This may take longer or less time, it depends on your mixing speed. The key is to look for the mixture to begin climbing up your mixer, once it starts running up, it’s done.)

Homemade Rice Krispies Treats

Ingredients:

  • 4-5 Tbsp. butter (I used Kerrygold)
  • 9-10 cups Rice Krispies ( I used Erowhen brand, pictured below)

Steps to crEATe:

1.)    Add butter to skillet on medium-high heat, while butter is melting toss in rice krispies, one cup at a time, stirring into butter after each cup. Add more butter if you need to.

2.)    Once all krispies are added add krispies to a large mixing bowl.

3.)    Pour about ½ marshmallow batch over rice krispies, stir in. Continue adding remainder of marshmallows, stirring occasionally.

4.)    Grease a large Pyrex or baking dish and evenly spread marshmallow/krispies mixture. Cool for at least 20 minutes before serving.
