Dark, Dark Chocolate Marshmallows
When you think of a marshmallow, what color comes to mind? Probably white…
Now check out this picture, Dark Brown is what you see. Now a picture might not be enough to change your color perception of the old fashioned marshmallow, but after you taste the end product of this recipe, it WILL be enough.
- 1 cup water
- 3 tbsp NON-hydrolyzed Gelatin
- 2 cups raw sugar
- 1 tbsp. vanilla extract
- 2 tbsp. cinnamon
- 1 70% organic dark chocolate bar
1.) Mix 1/2 cup water and gelatin in small bowl. Allow to bloom for 10 minutes.
2.) In medium sauce pan on medium-high heat, add 1/2 cup water, sugar, 1 tbsp. cinnamon. Bring to a boil, let boil for 4 minutes.
3.) Heat dark chocolate bar in small sauce pan on low-heat.
4.) Add gelatin bloom to large mixing bowl, add vanilla extract, 1 tbsp. cinnamon. Begin pouring sugar mixture while mixing on low with hand-mixer.
5.) Mix on low for 3 minutes beginning after all liquid is poured in. Add 2 tbsp. melted dark chocolate. Mix on HIGH for 8 minutes until the mixture turns into a dark chocolate marsh.
6.) Grease a medium pyrex dish with coconut oil and scoop out batter into dish. Drizzle 2 tbsp./remainder of melted dark chocolate. Refrigerate.
