Coconut Flour Banana, Carrot, Chocolate Chip Muffins

Makes 12 Muffins

Ingredients:

Dry

  • ½ cup coconut flour
  • ¼ cup tapioca flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 Tbsp. cinnamon

Wet

  • 4 eggs
  • ¼ cup coconut oil, melted
  • ¼ cup honey
  • 3-4 ripe bananas, mashed
  • 2 cups shredded carrots
  • ½ cup chocolate chips

Steps to crEATe:

1.)    Heat oven to 350° and add 12 muffin papers or grease muffin tin with coconut oil. Set aside.

2.)    Combine dry ingredients in large mixing bowl. Set aside.

3.)    Whisk eggs in small bowl. Add eggs, honey, coconut oil to dry ingredients and mix well. Add bananas and carrots, continue to mix until all flour is dissolved.

4.)    Fold in chocolate chips. Divide evenly in muffin compartments.

5.)    Bake for 20-22 minutes.
